Originally from Tipperary in central Ireland, Damien finished his apprenticeship in Waterford before moving to London to work for the iconic Conran group at Mezzo in Soho and their flagship Michelin star restaurant, The Orrery. Damien moved to Australia 17 years ago and was sponsored by the Nissen family to run their Irish restaurant, The Print Room in Paddington, Sydney. After 5 years, he moved to take the Executive Chef role for the function department of the University of Sydney Union. Damien moved to Queensland 6 years ago and took the position of Group Executive Chef of the Sunshine Coast Hotel Group. The group is currently comprised of 4 units, Brightwater Hotel, Parklands Tavern, Baringa Tavern and The Lakehouse Sunshine Coast with 1 more venue being added to the group within the next year.
