Julia's Easy Carrot Cake Recipe

Try your hand at Julia's Easy Carrot Cake made from scratch with fresh, local Queensland ingredients.

This recipe is a modern twist on traditional Carrot Cake recipes using ingredients commonly found in the pantry. It’s perfect for casual desserts, brunches and afternoon breaks – when you crave a treat that’s quick and tasty.



3 Large Eggs

1 Cup Sunflower Oil

1 1/3 Cups Brown Sugar

3 Cups Grated Carrot

2 1/2 Cups Self Raising Flour

1 tsp Bicarb of Soda

2 tsp Mixed Spice

1 Cup Chopped Raisins

Handful of Toasted Chopped Macadamia Nuts
